Wacky

Now, I know I've mentioned how much Jack loves to cook with me. And even though it turns into a complete mess everywhere, and I break out in a sweat trying to keep him from dumping 10 eggs in every bowl and mixing the dry with the wet before it's time, I do love having him on a chair next to me in the kitchen. Cooking is a major stress reliever for me, and while it seems like more stress when you add Jack to the mix, I love having his "help."

Last week we made Wacky Cake! When I told Jack we were making Wacky Cake, he said, "What's wacky?" and I made a little joke and said, "You are wacky, Jack... Jack is wacky..." and then he said, "We're making wacky Jack cake Mommy?"

The best part of helping bake when you are a kid (or let's face it, when you're an adult too...) is licking the bowl!! No eggs in a Wacky Cake, so Jack got the green light to go to town.


And in case you're wondering, the cake was really good. I had frozen some strawberries from our picking adventure last month and I sliced some up and put them on top of the cakes so I could feel like it was a semi-healthy snack, and topped it with some whipped cream. We loved it!

Jack's Wacky Cake
2 1/4 cups all purpose flour
1/2 cup cocoa powder
1 cup sugar
1/2 cup brown sugar
1 tsp baking soda
1/2 tsp salt
1 cup water
9 tbsp vegetable oil
1 tsp vanilla extract
1 tbsp vinegar

Preheat oven to 350F. Grease and flour a 9-inch bundt pan. (I have a really cool mini-bundt pan, but also, an 8x8 would work too).
In a large bowl, sift together flour and cocoa powder. Whisk in sugar, brown sugar, baking soda and salt. Pour in water, vegetable oil, vanilla extract and vinegar, whisking thoroughly, but quickly, until the batter comes together and is quite smooth.
Pour into prepared pan.
Bake for 45-50 minutes at 350F until a tester comes out clean and the cake springs back when gently pressed.
Allow to cool in pan for 10 minutes, then turn out onto a wire rack to cool completely. Once the cake as cooled, top with any glaze, or with strawberries and whipped cream!
